Saketini (Serves 1)

This cocktail is a wonderfully light take on a Martini. The Sake offers a light and refreshing edge, making it the perfect early evening treat!..
120ml sake
15ml gin
1/2 teaspoon dry vermouth
A dash lemon juice
A handful of ice
To garnish: a finely sliced round of apple (optional)
- Add all ingredients to a cocktail shaker with the ice. Shake vigorously for 10 seconds and strain into a chilled cocktail glass.
- Garnish with the finely sliced round of apple.
Sake Sour (Serves 1)

I’m off to Japan at the end of this month, so I’m getting in the mood with this cocktail!..Sake, with its low alcohol content, makes this cocktail wonderfully light. The problem is that with its moreish, delicate flavours you’ll be wanting more than one, so it could be dangerous!..
80ml Sake
7.5ml lime juice
5ml lemon juice
10ml sugar syrup
7.5ml egg white
Handful of ice
Garnish: Coin-sized piece of lime zest.
- Shake all the ingredients (except the garnish) with the ice, then strain back into the shaker.
- Shake again without the ice (dry shake) and strain into a chilled coupe glass and garnish with a piece of lime.
